Aultmore, Square Barrel 16-year-old (Scotland)
Square Barrel’s first offering is a 16-year-old Aultmore from a Sherry butt, which has been finished in a square barrel and yielded 500 bottles. Crawford intends to invest in another cask of single malt and give it the square barrel finishing treatment in the near future, and says “We might end up maturing whisky completely from scratch in the square barrels or finish them for a year or so in it. For our next bottling we’re looking at something older than the Aultmore, probably 20 years plus. If it’s a hogshead rather than a butt we’ll only get around 300 bottles, so it’s very much a limited edition venture. Every bottling will be unique.” The whisky has honey, dark Sherry and toffee apple toffee on the nose, with a robust palate of treacle, malt and finally a hint of Lapsang Suchon. The lengthy finish is filled with old oak, liquorice, and dry Sherry. Moreish! 49.0% ABV, 70cl, £80.00, Square Barrel.
